Make these easy Shamrock Chips to go with eggs or guacamole for St. Patrick's Day. Or send a basket of chips with a special dip of your choice to bless a friend. Give them a try!
Ingredients
1 package of Spinach or Garden Herb tortillas (I used Mission brand Garden Herb and Spinach tortillas.)
1 large Shamrock cookie cutter (metal cuts best but plastic will do if you press hard)
Salt (prefer course or pink himalayan)
Light-tasting oil spray
Instructions
- Using a large cookie cutter, press out four large shamrocks per tortilla.
- Lay out chips on a lightly oiled cookie sheet or on a silicone mat.
- Spray the tops of the cut tortillas lightly with oil spray.
- BAKE at 400 degrees for 7 minutes.
- Nice accompaniments are:
- Guacamole - Mashed ripe avocado with salt and squeezed lime to taste
- Cucumber salsa - Finely cube the following: 1 seeded cucumber, 2 slices of white onion, 2 slices of honeydew melon and 1/2 jalapeño. Double or triple recipe as needed.
